Here's something for the BBQs this weekend. It's dedicated to all my vegetarian friends.
Mix together: 1 cup of fresh breadcrumbs, 2 shallots finely chopped, 1 garlic finely chopped, 1 can of borloti beans, a handful of chopped basil, 1 fresh mozzarella cubed in little pieces, salt pepper and drizzle of olive oil. Mix well and stuff any veggie that you like. I generally use Courgettes, peppers, aubergines or mushrooms. Wrap in foil and bbq for 15 minutes or until the cheese is melted and the veggies cooked through.
I love meat but these can convert me!
